describe. Think New American, with a strong Japanese influence and touches of
French and Italian. Chef Hiro Sone is in charge of dinner, which slinks elegantly from
raw (pristinely cut sashimi, tartare or barely smoked fish) to cooked (anything from
sake marinated cod to lamb two ways). His wife, Lissa Doumani, takes on pastry
chef duties, showcasing perfect seasonal fruit in tarts, pastries and ice creams.
