Food & Wine magazine has gone beyond naming its Best New Chefs each year — a selection of 10 new chefs from around the country. It’s put them to work at a new restaurant inside The St. Regis Aspen Resort, where past winners are selected to prepare seasonal menus twice a year. The chefs come up with dishes and work with The St. Regis staff on preparing them. Previous Best New Chefs George Mendes, James Lewis, Alex Seidel and Sue Zemanick were chosen to inaugurate the menu at the restaurant, which opened in June 2012. Chefs Club by FOOD & WINE’s December 2012 menu, featuring signature dishes by Jenn Louis (BNC 2012) of Lincoln Restaurant and Sunshine Tavern in Portland; Jonathon Sawyer (2010) of The Greenhouse Tavern and Noodlecat in Cleveland; Kevin Willmann (2011) of Farmhaus in St. Louis and Matt Lightner (2010) of Atera in New York City. Each chef will make appearances at the resort to showcase his or her cuisine. We can’t think of a better way to sample what America’s new culinary talent has to offer.
