The chefs at Chefs Club by FOOD & WINE change regularly. Twice each year, the restaurant welcomes four new chefs selected in FOOD & WINE magazine’s “best new chefs” competition. For its first winter season, for example, the restaurant welcomed four acclaimed chefs from across the country: Matthew Lightner, Jenn Louis, Kevin Willmann and Jonathon Sawyer.
Chef Matthew Lightner ventured in from New York City’s Atera to lend an eye skilled in molecular gastronomy and foraging. Jenn Louis, a James Beard Foundation semifinalist in 2010, made a shorter trip, from Portland’s Lincoln Restaurant and Sunshine Tavern, to serve up seasonal ingredients in sophisticated ways. Kevin Willmann, from Farmhaus in St. Louis, brought the family values of the Midwest to Colorado with a refreshing take on American small plates. And Jonathon Sawyer, who owns several Cleveland, Ohio, restaurants including The Greenhouse Tavern and Noodlecat, brought seasonally inspired French techniques and Asian fusion concepts to the Aspen hot spot.
