Open to the cooling trade winds, the Banyan Tree is nicely situated above Hanaloa Bay. On the grounds of The Ritz-Carlton, Kapalua, the restaurant is located below the hotel’s tropically terraced pool complex. A casual poolside restaurant by day, it takes on a decidedly fine-dining air at night. Tiki torches, wall sconces, lanterns, and candles all contribute to the romantic atmosphere, as does the soft New Age music played by the duo Ranga Pay (one of whom plays a Japanese harp) each night. On the contemporary Australian menu, you'll find such dishes as poussin sautéed with macadamia nuts; ahi tuna and seared foie gras; and grilled filet mignon.
