The menu at Meritage has a unique, wine-based organization. Foods are grouped into six categories based on wine characteristics and which foods pair best with those characteristics. The six sections include: Sparklers, Light Whites, Full-Bodied Whites, Fruity Reds, Spicy/Earthy Reds and Robust Reds. If you like a certain vintage of red wine, then you’ll have a great idea of which items to order. Or if you know you want a seafood dish, you’ll know which kind of wine to expect the sommelier to suggest. Menu items include oysters topped with caviar, pan roasted New York foie gras and maple and mustard rubbed roast Colorado lamb sirloin. The Forbes Travel Guide Four-Star restaurant features numerous fish options, such as a lobster dish, and a few vegetarian treats as well. Each item on the menu can be ordered as a small plate for $17 or as a large plate for $34. In general, three small plates or one small plate and one large plate will be plenty for a meal.
