The pastry chef at Meritage, a Forbes Travel Guide Four-Star restaurant, is Bill Romiza. The chef’s dessert options beautifully complement chef Daniel Bruce’s food and wine philosophy. Romiza cut his teeth as a baker in his grandparents’ Portuguese bakery on Cape Cod, and he parlayed that early experience into a lifetime of cooking in hotels around the country before coming to the Boston Harbor Hotel in 1998. His desserts can be paired with the various wines and after-dinner drinks on Meritage’s menu. The chef likes to create tasting plates. For example, the chef might highlight various red fruit tastings with a spread that includes a frozen pomegranate parfait, a cranberry and brown butter tart and red wine currant cheesecake.
