Jill’s Restaurant at St Julien Hotel & Spa features a menu filled with contemporary French and American cuisine. Chef Laurent Mechin incorporates fresh, organic ingredients from the Boulder Farmer’s Market into many of his dishes to ensure the highest quality.
Start your dinner at the Forbes Travel Guide Four-Star restaurant with escargots served with garlic butter or try the corn chowder dotted with smoked crawfish, pancetta and jalapeño crème fraîche. Salads include an iceberg wedge with bacon, scallions, tomatoes and blue cheese dressing; organic greens with candied walnuts, pears, grapes and a hazelnut vinaigrette; or a Caesar that is prepared tableside with romaine, garlic croutons, anchovies and Reggiano.
Entrées include a choice of spice-rubbed Scottish salmon, rigatoni Bolognese made of spicy sausage with porcini mushrooms, hand-rolled potato gnocchi or a Colorado lamb. One of the best main courses is the filet mignon Diane. The meat is flambéed tableside with brandy and served with caviar-topped mashed potatoes.
Chef Mechin likes to feature seasonal dishes on his menu as well. For autumn, he adds roasted butternut squash soup, pumpkin ravioli and pumpkin crème caramel into the lineup.
