“Centrally located in the middle of nowhere” is how Chez Paul describes its location in rural West Maui, about 8 miles south of Lahaina on the coast highway (Highway 30). The West Maui Mountains serve as a dramatic backdrop for the restaurant, while the Pacific Ocean laps the shore across the street. On the outside, this is a nodescript roadside restaurant. Inside, however, you'll find an intimate, sophisticated, fine-dining establishment. Somewhat of an anomaly in this area, it has been serving French Provençal cuisine for more than three decades. The dining room is small but formally set for gourmet dining, with French music playing in the background.
