The head sommelier duties at Alinea fall on Craig Sindelar, who has overseen the Forbes Travel Guide Five-Star restaurant’s sommelier team since 2006. A Wisconsin native, Sindelar spent many years working at fine dining restaurants in Florida, Nevada and Mississippi before moving to Marbella, Spain, in 1998. There he was selected by the Spanish government to enroll in the sommelier program at the Hotel-School Bellamar, from which he received his sommelier certificate with top honors. Sindelar spent five years working in Spain, most notably as the sommelier at San Sebastián’s Akelare. He returned to Chicago in 2004, where he served as manager and sommelier at Pluton until Alinea opened in 2005.
