Since Penrose Room executive chef Bertrand Bouquin’s menu changes seasonally, highlights come and go. But a few things warrant special mention; we think you should try these five dishes, if you get the chance:
1. The appetizer tasting. This tasting allows you to sample five different hors d’oeuvres (for a supplemental fee). When you can’t decide, this dish is an easy choice.
2. Foie gras. Do yourself a favor and make sure that at least one of the appetizers you choose features foie gras, cold or hot. Either option will be treat for your taste buds.
3. Caesar salad. The Caesar salad stands alone as a permanent fixture of the menu and with good reason — prepared tableside, it’s a side show as well as an old favorite.
4.Halibut. Halibut in black olive oil with fingerlings, mustard greens and baby carrots is another signature. The seemingly simple dish lets the great ingredients shine.
5. Dessert with seasonal fruits. And although the Forbes Travel Guide Five-Star restaurant's executive pastry chef’s dessert selection rotates regularly, his penchant for seasonal fruits is something to consider as you peruse your options. The sommeliers recommend ice wines or sauternes with fruit desserts, so be sure to ask for suggestions to pair with your sweet ending.
The menu changes seasonally, so many of the dishes and preparations change. However, there are a few signature dishes to mention such as tableside Ceasar Salad, Caviar and Crab Bisque as well as wines from the 1,000-bottle list and signature cocktails.
