Together these three cultivate this Forbes Travel Guide Five-Star restaurant’s entire wine list, which at nearly 30 pages long is sure to include reds, whites and rosés from your favorite wine-producing regions. They also curate the restaurant’s list of wines that can be purchased by the glass — at the time of publication 18 different wines are available — create the wine pairings for executive chef Bertrand Bouquin’s seven-course Chef’s Tasting Menu and make the rounds through the restaurant to answer questions and offer recommendations.
