The Coyote Roadhouse restaurant, located just outside of Bigfork inside of the Coyote Roadhouse Inn, offers an elegant, intimate dining experience. The dining room features oak tables topped with pink roses and beautiful, country-style dinnerware. Menu choices reflect chef/owner Gary Hastings’ travels, with internationally influenced fare that features Southwestern, Tuscan, Cajun, and Mexican flavors in dishes like jambalaya with scampi and petrale sole with red peppers, pea pods, yellow squash, and a five-citrus sauce. The wine list also reflects the chef’s travels, especially to Italy, where he selected the best wines he could find on his visits to smaller wineries.
