Chef/owner Bernard Dervieux brought inspiration from his native France when he opened Cuistot. The restaurant itself is reminiscent of a French farmhouse, with beamed cathedral ceilings, a large stone fireplace, and low lighting with candlelit tables. His inventive French/California menu also reflects inspiration from his home country, with dishes like quail stuffed with sweetbreads that is served with black rice and Chablis sauce; and skillet-roasted veal chop with mushrooms, roasted garlic, and fresh thyme. Wine Spectator magazine awarded Cuistot’s wine list their Award of Excellence in 2005. Exquisite food and wine coupled with fantastic service make Cuistot a must to dine at in Palm Desert.
