Does Wolfgang Puck ever miss? Apparently not—the man’s got another hit on his
hands, this time with CUT, located in the posh Beverly Wilshire hotel across the
street from the Rodeo Collection shopping center. Designed by celebrity architect
Richard Meier of Getty Center fame, CUT is stark and sleek, with a skylight that
plays up the moonlight glow after dark. The cuisine here is steakhouse fare with
imagination, such as the starter of warm veal tongue, marinated artichokes, autumn
shelling beans and salsa verde. Start with the Maryland blue crab and Maine lobster
Louie cocktail with spicy tomato horseradish, and follow it with the 14-ounce
New York sirloin—it’s Nebraska corn-fed and dry-aged for 35 days. And don’t cut
yourself off before dessert; the nougat semifreddo (Italian for “half-cold” or chilled)
with strawberry sorbet and wild strawberries is superb.
