Chef Dean Fearing’s eponymous eatery at The Ritz-Carlton, Dallas is inspired by his grandmothers’ love of Southern food and barbecue. Fearing has imbued his dishes with Texas taste enhancers like peppers, dried chiles, jicama and cilantro in signature dishes like the famous tortilla soup, barbecued shrimp taco and rib-eye mopped over live mesquite.

Seven different seating options — including a live-action kitchen (where you can watch the masters at work), the mahogany-walled Rattlesnake Bar and a soothing alfresco patio — provide a unique dining experience on every visit.

The Food
  • The Four-Star restaurant serves up breakfast every day, where you’ll find cos’ chili on jalapeño cheddar cheese biscuits served with a poached farm egg and poblano Hollandaise.
  • Head in for lunch and chow down on Dean’s famous tortilla soup and Dublin Dr. Pepper braised short ribs.
  • For the main event, make your way to dinner any day of the week for culinary masterpieces such as maple-black peppercorn-soaked buffalo tenderloin.
  • Fearing’s also offers a Sunday Brunch with choices such as almond French toast and “chicken fried” Texas quail.
  • For an elegant taste of Texas, opt for the A Bar N filet mignon. The locally sourced cut is cooked to perfection over mesquite and goes nicely with the Southwestern Caesar, Fearing's take on the classic salad with a local red chili dressing. 
The Drinks

  • Though the concoctions are seasonal, the restaurant’s Rattlesnake Bar mixes up some regulars, including our favorite, the Texas Spring Punch, made with Tito’s Handmade Vodka, freshly squeezed lemon juice, Mathilde Blackcurrant liqueur, house-made sugar syrup and Domaine St. Vincent sparkling wine.
  • Of course, you’ll find your classics with a twist at this Four-Star restaurant, such as the Superior Martini with Bacardi Silver, freshly squeezed lime juice and grenadine, or the Manhattan Club with Maker’s Mark Bourbon, Dolin Sweet Vermouth, Angostura Bitters and Luxardo maraschino syrup.
