Arnaud Berthelier, who creates menus influenced by the lively flavors of France,
Spain and Northern Africa at the Dining Room in the Ritz-Carlton, Buckhead. Dishes
served in the classically elegant room (think deep, tufted banquettes cloaked in Victorian
green silk) include sweetbread kebobs with tomato confit, lobster and citrus
cocotte or truffle-stuffed guinea hen. After dessert and a cheese course, sample the
