Chef de Cuisine Joseph Trevino is responsible for the menu at Dux, located within
the Peabody Hotel. The dining room’s ambience is elegant and regal with Travertine
floors, massive columns and crystal chandeliers. The menu features dishes such as
warm lobster and potato salad, sheep’s milk ricotta ravioli, California halibut and
Berkshire pork tenderloin. Dux derives its name from the hotels trained procession of
ducks that march to and from their $100,000 Peabody duck castle, walking across the
lobby’s red carpet.
