Continuing the longstanding tradition of unparalleled service and attention to detail, general manager Duane Thompson leads the Penrose Room. A 34-year veteran of The Broadmoor, Thompson was the first maître d’ in Colorado to earn the Five-Star award. Thompson’s management background includes time at the London Grill and The Broadmoor’s Charles Court, Tavern and Penrose Room dining rooms. He adds his incomparable experience and personal warmth to the Penrose Room.

    What vegetarian and vegan dishes does Penrose Room offer?

    With the menu changing seasonally at Penrose Room, the vegetarian and vegan dishes vary. Some examples of the types of vegetarian and vegan items are cream of white asparagus soup, mesclun greens salad, warm goat cheese salad, selection of cheese plates and five-herb and ricotta ravioli. Executive Chef Bertrand Bouquin is always willing to create a unique dish for the guest from other vegetables and risottos that are on the menu. He can also make a special vegan dish on request.

    The place settings at Penrose Room include a base plate with a linen logo silencer in between it and a gold iridescent base plate. White china edged in royal blue and gold, cobalt water glass, Riedel wine glasses and gold lint-free linens adorn the table.  Table lamps, live florals, salt dips and pepper grinders fill the center of the table.

    The Chef's Table at Penrose Room is a private dining experience at the peak of perfection. With cooking and wine demonstrations for up to 16, guests are treated to an up-close look of the chef in action, as well as a breathtaking wraparound balcony perfect for receptions prior to dinner or for sipping port after. Enhancing Penrose Room's timeless elegance is the glass-enclosed, 24-seat semi-private dining room, which extends out from the main dining room affording guests a breathtaking mountain and lake view.
    Located at the Southwest corner of the restaurant, the Cornet Room accommodates up to 40 guests and is the perfect location to experience a tasting menu by Executive Chef Bertrand Bouquin.

    Leading the Broadmoor Culinary teams Executive Chef Bertrand Bouquin has proven his versatility and creativity in the drastically differing menus of Summit and The Penrose Room. Summit’s American brasserie cuisine and the continental fine dining offerings found at Penrose Room, showcase chef Bouquin’s talent in classical technique and innovative style. Bouquin joined The Broadmoor’s legendary team of chefs after his role as executive chef at the exclusive Maisonette in Cincinnati, Ohio. Bouquin has had the good fortune to train under several world-famous chefs, including Alain Ducasse, Daniel Boulud, and Jean-Pierre Bruneau. Prior to manning the stoves at Maisonette, Bouquin worked at some of the best restaurants in the United States, including Club XIX at the Lodge at Pebble Beach, and Restaurant Daniel and Café Boulud in New York City. His experience while in Europe includes key positions at Bruneau in Brussels and Le Prieure in Villeneuve Les Avignons, France. Penrose Room is Colorado’s only Forbes Five-Star restaurant.
