Executive Chef

Freddy Vargas, executive chef of Scarpetta and Paninoteca, the artisanal sandwich concept he launched out of Scarpetta’s kitchen in 2014, joined Scarpetta Beverly Hills as chef de cuisine in 2010 and was promoted to executive chef in 2013. He began his career with chef Scott Conant in 2008 at Scarpetta at Fontainebleau Miami Beach, where he spent one year as sous chef before moving to New York to work as chef de cuisine at the flagship location. Vargas previously worked at David Burke & Donatella in New York and is a 2005 graduate of the American Culinary Institute of New York.
