James Overbaugh is Executive Chef at The Peninsula Beverly Hills, overseeing all aspects of the cuisine, including the contemporary market-driven fare at The Belvedere, a Forbes Travel Guide Four-Star restaurant, and the alfresco Roof Garden. Before joining The Peninsula Beverly Hills in 2008, Overbaugh was executive chef at Château du Sureau, a Forbes Travel Guide Five-Star hotel near Yosemite, and the Four-Star Windsor Court Hotel in New Orleans.

    Does The Belvedere offer any special gifts from the chef?

    After lunch, The Belvedere offers a bag of housemade cookies to guests to take home or to the office. This is a treat that our guests can enjoy with their afternoon cup of coffee or share with others. In the evening, guests are served an amuse bouche before the meal and before dessert. In addition, every lady is gifted with a tin of our housemade granola, a perfect way for her to continue her Peninsula experience the following morning.

    Who is the chef at The Belvedere and what is his background?

    I am the executive chef at The Belvedere. Prior to joining The Peninsula Beverly Hills in 2008, I spent more than 10 years at another Forbes Travel Guide Five-Star property, Château du Sureau, near Yosemite, California, as well as a few years in New Orleans as executive chef of The Windsor Court Hotel.

    What non-alcoholic drinks or mocktails does The Belvedere offer?

    Our Raspberry-Lime Rickey and Blackcurrant-Mint Cooler are among the many fun mocktails offered at The Belvedere. We also offer more than eighteen different teas, all of which can be served iced. Very popular are our smoothies made from scratch using fresh fruit, honey and yogurt, with the option to add protein powder for an extra boost.

    In recent years, it has become increasingly difficult to secure first-growth Bordeaux wines in the United States. The Belvedere not only carries a considerable number of these hard-to-find wines, but we also offer a rare vertical of La Tâche, Monopole, Domaine de la Romanée-Conti.

    What are some of the specialty cocktails available at The Belvedere?

    The Belvedere’s California Collins is a refreshing blend of fresh strawberries, elderflower liqueur and Bombay Sapphire gin. Another popular choice is our Pomegranate Lemonade, which includes fresh lemonade, pomegranate juice and Ketel One Citron vodka. For lovers of bubbles, we have our Bubbles and Bliss, a blend of Veuve Clicquot Ponsardin and Neuro Bliss.

    Does the menu at The Belvedere have seasonal dishes?

    Our menu at The Belvedere is highly seasonal. Unlike other restaurants’ menus that change on a scheduled date, ours evolves throughout the year. When a product comes into season, it goes on the menu; when it goes out of season, it comes off. For example, in late April, you will see fava beans on the menu, but by August, when they become too big and often dry, the menu will feature more corn and tomatoes instead. My goal as a chef is to ensure that a guest can tell what month we are in by looking at the menu. For example, if guests see persimmons, they know that it is fall or early winter. However, if a special tomato dish is also on the menu, they will know that it is early fall, as tomatoes are still at their peak then in Southern California.

    Our desserts at The Belvedere are easily categorized either as classic or modern. Our chocolate soufflé is one of our most popular items, but not to be outclassed by our panna cotta. On the more modern side, our pastry chef recently created a yuzu parfait that has quickly become a favorite of many guests.
