Originally from France’s Loire Valley, Dubray spent 20 years with The Ritz-Carlton Hotel Company at properties across the globe, including The Ritz-Carlton, San Francisco.

    What epicurean events are coming up at The Resort at Pelican Hill?

    Every table at Pelican Hill offers enticing epicurean experiences throughout the year, but here are a few of my recommendations for the winter season:

    Beginning in January and continuing through March, Andrea Ristorante presents its Black Truffle Treasure Menu with special á la carte Northern Italian dishes featuring imported tartufo nero (black truffles). Our guests will enjoy antipasti, rustic pastas, hearty meat entrées and fresh seafood, highlighting traditions from every corner of Tuscany.

    On February 14, our annual Dinner of the Senses returns to Coliseum Pool & Grill. An intimate and sensual dining experience, this table for two experience stimulates each of the five senses of sight, touch, taste, scent and sound. Created by Coliseum Grill Chef Micah, the seven-course menu features “his and hers” selections. Served in a private poolside cabana, each course is eaten by hand without the use of utensils, tapping into the desire to nourish one another and share cherished moments together.

    Pelican Grill’s Tasting Table, available year-round, invites epicureans to be seated right next to the restaurant’s open-concept kitchen in the main dining room. This interactive, chef-led dining experience presents guests with exclusive daily dishes featuring the freshest seasonal ingredients and creative presentations. Adjacent to the kitchen’s busy pass counter, Pelican Grill’s Chef Luke is at your service tableside in the dining room at a rustic, wooden table set for up to 10 guests.

    On the evening of March 6, I am pleased to debut a new epicurean experience called the Executive Chef’s Dinner Show Kitchen. Guests are invited to join me for an engaging evening of cooking demonstrations, a multi-course dinner and lively music. They will mingle with epicurean enthusiasts at long, communal tables, while my ensemble of skilled cooks and I take the stage to narrate a masterful preparation of interesting, inspired cuisine right before your eyes. I will send everyone home with a complimentary culinary gift bag, including a collection of the evening’s recipes. I certainly hope to see you there!

    What epicurean holiday events does The Resort at Pelican Hill offer for families?

    From Thanksgiving through the New Year, our chefs present family-friendly holiday season activities and entertainment throughout The Resort at Pelican Hill. During November and December, I recommend the following top five family activities:

    Children’s Gingerbread House Decorating: Pelican Hill’s Pastry Chef highlights a favorite holiday tradition in this culinary class. Children ages 5 and older will enjoy lunch and create a masterpiece to take home.

    Nutcracker Tea Holiday Party: Children and their families are invited to enjoy an enchanting tradition, featuring a delightful Nutcracker ballet performance and holiday tea in the Resort’s elegant ballroom.

    Breakfast with Santa: Tell Santa your holiday wishes, enjoy seasonal music, and savor a traditional breakfast buffet. A to-go candy buffet and Santa photo souvenir are included.

    Afternoon Tea & Children’s Story Time: Families are invited to attend Afternoon Tea in the Great Room with performances of classic children’s story books, sing-alongs, dancing and a special children’s menu! Join Rapunzel on November 29 and Beauty on December 27.

    Thanksgiving Day and Christmas Day Brunches: Our annual ocean-view ballroom brunches include children’s entertainment, such as crafts, cupcake decorating and puppet shows.

    What are the summer menus like at The Resort at Pelican Hill?

    This summer, Pelican Grill and Coliseum Pool & Grill are featuring special dishes honoring the cuisine of the countries competing in the World Cup Brazil games. Guests can view the matches on our nine-foot TV screens in the Lounges, or on flat-screen TVs in a private ocean-view cabana.

    For a taste of Southern California’s locally sourced produce, guests enjoy daily Ranch-to-Resort Summer Specials at Coliseum Pool & Grill. Freshly picked from the Irvine Ranch® just eight miles away, an abundant variety of farm-fresh summer products inspire Chef Micah’s à la carte specials. Local tomatoes, strawberries, avocados and beans are in season this summer and coming to dining tables across the Resort, including our signature restaurant, Andrea.

    The Caffé offers Crystal Cove Picnic Basket for lunch, dinner or anything in between. Guests can experience a quintessential seaside tradition along the Pacific Coast by pre-ordering their own gourmet beach picnic, including artisan panini, fresh wraps, Irvine Ranch salads, seasonal fruit, pasta salads, savory snacks and bakery sweets.

    What’s new at The Resort at Pelican Hill’s restaurants?

    At the beginning of this year, Pelican Grill debuted its new Tasting Table experience, which invites epicureans to be seated right next to the restaurant’s open-concept kitchen in the main dining room. It’s an interactive, chef-led dining experience featuring exclusive daily dishes that highlight the freshest seasonal ingredients and creative presentations. Pelican Grill Chef Derek Brooks prepares the day’s selection of prix fixe specialties and presents them at the tableside of the adjacent rustic, wooden table set for up to 10 guests. As they converse with the chef, diners savor Napa-inspired cuisine paired with fine California wines.

    In April, Pelican Grill brings back The Masters Menu. As guests watch the pros compete from Augusta National Golf Club in Georgia, they can enjoy Chef Derek’s selection of Southern dishes available exclusively during The Masters. The golf-inspired menu includes specials, such as Fairway Fried Chicken Birdie, Shrimp ‘n’ Bunker Grits and Pimento Grilled Cheese Sandwich, a Masters tradition. Featured beverage selections include Sweet Tea, Mint Julep, Arnold Palmer and Pickled Okra Bloody Mary.

    On Easter Sunday, we invite guests to Traditional Easter Brunch. Amidst Pacific Ocean panoramas, the little ones delight in an Easter egg hunt, Easter Bunny visits, face painting and balloon shaping on our picturesque Rotunda Lawn. In Mar Vista’s grand ballroom, we will present traditional brunch favorites, with California and Tuscan accents. We also have Mother’s Day Ballroom Brunch coming up in May.

    During the month of May, Andrea Ristorante presents the Spring Asparagus Seasonal Menu, featuring produce harvested from our local Irvine Ranch®. The á la carte tasting menu of Northern Italian dishes includes hand-made tagliolini with bay scallops, green asparagus and black summer truffle, and green asparagus soup with soft-poached quail egg, parmesan cheese crisp, taggiasca olive dust and peperoncino oil.

    Looking ahead to late spring and early summer, Pelican Grill and Coliseum Pool & Grill bring all the action of the World Cup Brazil games to our guests on nine-foot TV screens. At Coliseum Pool, guests can also cheer their team to victory on flat-screen TVs in a private cabana. In each restaurant, we’re creating World Cup Dining Specials, honoring the cuisine of the countries competing.

    During the autumn and holiday seasons, The Resort at Pelican Hill highlights an abundance of fresh flavors and time-honored traditions. From Thanksgiving dining and Hanukkah feasts, to Christmas events and New Year’s festivities, guests gather with their loved ones to celebrate at Pelican Hill during this special time of year.

    In November and December, our annual Pelican Hill Culinary Academy invites guests to explore the flavors of the season with fresh, local ingredients from the Irvine Ranch®. Our chefs du cuisine lead hands-on courses paired with wines. Classes take place Friday evenings in a luxurious Villa kitchen and feature a distinct menu theme, such as The Art of Making Fresh Pasta, Chef’s Secrets for Thanksgiving and Holiday Entertaining Small Plates.

    At our signature restaurant, Andrea Ristorante, our Michelin-starred Chef Luigi Fineo presents the White Truffle Menu with an exquisite delicacy from Alba, Italy in a la carte dishes. In celebration of Southern California’s harvest season, Chef Derek Brooks presents an Olive Oil Savor Tasting Menu at the Pelican Grill. The Coliseum Pool & Grill, led by Chef Marc Osier, features new Sweet & Savory Pumpkin Specials, such as creamy pumpkin bisque and pumpkin ravioli with sage brown butter sauce.

    We have a variety of seasonal ingredients, such as tomatoes, strawberries, avocados and beans from our local Irvine Ranch®, coming to tables across the Resort this summer. At our signature restaurant, Andrea Ristorante, our Michelin-starred Chef Luigi Fineo presents authentic Italian cuisine, including hand-made pastas, artisan gelatos and fine Italian wines.

    Chef Derek Brooks offers a Chef’s Table experience and Tuesday Night Classic Gourmand Menu with dishes like lobster thermidor, chateaubriand, duck à l'orange, crab louie, crêpe suzette and baked Alaska at the Pelican Grill.

    The Coliseum Pool & Grill’s summer menu, designed by Chef Marc Osier, will feature endless pizza, pasta and gelato on the Coliseum Kids Menu, as well as a Sunday family feast with comfort foods like pot roast, lasagna, paella, chicken pot pie and meat loaf.

    At the Caffè, guests enjoy Italian coffees, sweet and savory fare and gourmet picnic baskets in a relaxed, ocean-view setting. This summer, we’ve also added a chef-crafted Sunset Sips & Savories menu with Italian small bites, specialty martinis and fine wines.

    What are the best Orange County food experiences?

    Andrea’s signature tableside risotto dish is not to be missed when you’re in Orange County. The Resort at Pelican Hill’s signature restaurant focuses on authentic Northern Italian cuisine. Michelin-starred Chef Luigi Fineo creates seasonal risottos featuring local ingredients and imported specialties, like black truffles from Europe and white truffles from Alba, Italy. As an interactive epicurean experience, the risotto presentation is designed to stimulate all five senses, from sight and smell to hearing and touch, and finally taste.

    Served from inside a large wheel of imported Italian parmigiano-reggiano cheese, the hot risotto is brought on a cart to the tableside, where a server prepares it in front of the guest. After pouring the risotto into the center hole carved in the parmigiano-reggiano wheel, the cheese is slowly shaved and stirred into the risotto. This creates a rich, creamy consistency and savory, cheese-infused flavor. The risotto is poured from the wheel into a shiny silver staub, then placed before the guest. That’s when we say, “Buon appetito!”
