Located in the Villard Mansion within the New York Palace Hotel, Gilt has been rejuvenated with new chef Justin Bogle and a constantly changing menu that spotlights seasonal flavors (soft-shell blue crabs with Georgia peaches and lamb with arugula, fava beans and lavender honey) in three-, five- and seven-course tasting menus. An impressive wine list features 1,400 bottles, including 50 selections under $50. Tippling not your thing? Gilt has assembled an extensive list of nearly 40 teas (like the rare, aged High Mountain oolong tea from Taiwan) chosen with seasonality in mind. The wood-paneled, library-esque 55-seat dining room in this historic mansion is straight out of a Brontë novel, while the contrasting slick bar with futuristic décor suggests a modern club setting.
