Saimin is a noodle soup that's very popular throughout Hawaii. Although the recipe is Asian, it originates with immigrants to the islands. This particular restaurant, located on a side street off Lihue’s Rice Street on the city’s west side, has been known throughout Hawaii for the quality of its saimin and its lilikoi (passion fruit) chiffon pie for more than 50 years. This is a small, no-frills dining spot that doesn’t take reservations, but the serpentine, orange-topped counters are filled with fanciers of saimin every evening.
