The dessert menu at CUT features at least five different options at any given time, and the selections rotate based on ingredient availability, though generally you’ll be able to order both the banana cream pie and the warm chocolate soufflé. The soufflé comes with whipped crème frâiche and gianduja ice cream. We had the banana cream pie at CUT, and we can tell you it’s not your average slice of pie. It’s a layered rectangle confection with a strip of banana across the top of it. A scoop of fudgesicle ice (chocolate gelato) comes on the side, and a stripe of chocolate sauce speckled with valrhona pearls finishes the presentation — it’s a one-of-a-kind spin on a classic dish and a reflection (albeit a sweet one) of CUT’s innovative menu.
