At Lakeside, the fine dining seafood restaurant at Wynn Las Vegas, executive pastry chef Kimberly Valdez creates a vast selection of whimsical and delicious desserts. Recognizing that diners have different dessert preferences, Valdez creates traditionally inspired desserts that appeal to people who like fruity, crunchy, chocolaty and creamy desserts. Ice cream lovers will adore the colossal super sundae with the traditional fixings, along with berry compote and a chef selection of garnishes. The bread pudding is adapted according to the season and the chef’s whims, so be prepared for a surprise. But if Forbes Travel Guide editors had to choose just one signature, they’d recommend the refreshing Citrus Layer Cake. Valdez layers green tea cake with white chocolate-yuzu cream, blood orange and candied almonds.
