Although Sage is certainly a luxurious restaurant, it still feels contemporary and trendy, and the table settings reflect a dressed-down, Las Vegas mentality. Rather than white tablecloths at the Forbes Travel Guide Four-Star restaurant, woven place mats top your dark wood table and a small purple glass candle holder cradles a tea light. If you’re in a large group and are dining at one of the circular tables in the middle of the room, a small floral display will grace your table, although the two-seaters don’t feature them, unfortunately. You’ll find your table set with Spiegelau glassware and Guy Degrenne flatware, and your farm-fresh fare will be served on solid white china and porcelain plates in varying shapes and sizes from Fortessa and Tognana. The simplicity of the china truly lets chef Shawn McClain’s food shine and complements the elegant yet unfussy cuisine.
