The executive chef at The Country Club is Carlos Guia. His father is Venezuelan and his mother is from New Orleans, which explains why he likes to use Venezuelan and Creole cuisines as his base. A classically trained French chef, he’s worked at Lutèce, Le Bernadin and the Waldorf-Astoria hotel, which are all located in New York. He also worked at Stages in Europe and Le Manoir aux Quat’Saisons, Georges Blanc, Auberge de Hoefslag, Scholteshof and Marco Pierre White at Harvey’s. Then he moved to New Orleans and worked with the Brennan family at Commander’s Palace and Palace Café before he relocated to Las Vegas to open Commander’s Palace Las Vegas, among others, and to take on his current position at the Forbes Travel Guide Four-Star Country Club at Wynn Las Vegas.
