The sommelier focuses on bold reds here and has a collection from the “roasted coast” — France’s Côte Rôtie. There’s also a section on the wine list dedicated to the sommelier’s favorite wines, which are available in limited quantity.
No meal is the same at the restaurant, where the wine list changes often — sometimes up to three times a week. That’s partly because the sommelier has his pick from all of Nemacolin Woodlands Resort’s huge wine cellar — it’s one of the most extensive in the country and has some of the finest wine in the region, totaling about 21,000 bottles. The cellar holds more than 50 vintage, first-growth Bordeaux wines from Médoc and Graves, as well as a collection of champagne, port and other vintage wines from Burgundy, Italy and Napa Valley. The oldest wine in the cellar is an 1845 Madeira, while the most expensive is a 1947 Cheval Blanc.
