The sommelier at Aqueous is usually on duty during dinner hours, so you can ask him to recommend a white to go with your seafood or a red to go with your beef. If you check out the wine by the glass list, you should also see a wine flight available — for us, it was a selection of California cabernet sauvignons.
The sommelier focuses on bold reds — he has a collection from France’s Côte Rôtie — but he can also call on the broad inventory of wines in Nemacolin Woodlands Resort’s wine cellar (Aqueous is located at Falling Rock at Nemacolin Woodlands Resort, which is within the larger Nemacolin Woodlands Resort). The wine cellar has about 21,000 bottles in its collection, including vintage, first-growth Bordeaux wines from Médoc and Graves as well as champagne, port and other vintage wines from Burgundy, Italy and Napa Valley. You’re sure to find a wine worthy of sipping as you gaze out over the verdant golf course outside the restaurant.
