Circa 55 Restaurant, located inside The Beverly Hilton, takes its name from the year the hotel was opened by famed hotelier Conrad Hilton, but the food and concept are anything but old-fashioned. An eye-pleasing, contemporary dining room — swathed in soothing neutrals and updated midcentury-inspired furnishings and banquettes — is a comfortable setting for trying chef Troy Thompson's market-driven, eclectic dishes, which run the gamut from grilled steaks to California white sea bass with purple sweet potato ravioli. "California" is a frequent menu descriptor, as 95 percent of the fare here is locally sourced. The views at Circa 55 Restaurant offer the best of SoCal as well; expansive glass walls allow for sweeping vistas of the property's famous Aqua Star pool.
