Don Brookshire, a certified sommelier, chooses the wines at Circa 55 Restaurant. The director of restaurants at the Four-Star Beverly Hilton, Brookshire previously oversaw restaurants and food and wine festivals at Walt Disney World in Florida.
The wine list at the Beverly Hills restaurant leans heavily domestic with notable reds from Napa Valley, Sonoma County and other parts of California. There is a selection of Bordeaux wines from France as well as some international options from Spain, Italy and Australia. There are no set wine pairings at Circa 55, but servers are very knowledgeable about the wine list and can suggest a perfect red to complement your New York strip steak, or a refreshing white to sip with your Cobb salad.
