CUT Beverly Hills

A sophisticated space for chops and cocktails
VERIFIED LUXURY
Sophistication meets steak in the heart of Beverly Hills at Wolfgang Puck’s CUT, a restaurant nestled inside the luxurious Beverly Wilshire, Beverly Hills (A Four Seasons Hotel). The 104-seat stunner crowns the Wilshire Wing of the Forbes Travel Guide Four-Star property, offering a world-class menu of steaks, seafood and fine wine.

Slip into a seat amidst the all-white contemporary décor from Richard Meier, acclaimed architect of L.A.’s Getty Center, and select your cut from a choice selection of meats presented tableside. Pay special attention to the impeccable marbling of the Japanese Wagyu beef, the texture of the Prime Illinois corn-fed, 21-day aged, bone-in rib eye steak and the definition of the double-thick Kurobuta pork chop served with Murray Farms’ Blenheim apricot mostarda.

Our Inspector's Highlights
  • The restaurant’s proprietor, Wolfgang Puck, has earned an international reputation for inventive, flavorful food. CUT is no exception, taking steakhouse favorites and adding a touch of flair to make each dish special.
  • With its contemporary design from Richard Meier, acclaimed architect of L.A.’s Getty Center, the dining area and CUT’s open kitchen are the focal points in the airy floor plan.
  • CUT is also a renowned favorite among the Hollywood A-list, so you never know who you might see sitting next to you sinking their teeth into a slice of wagyu beef.
  • Adjacent CUT Lounge marks the perfect place to begin or end your evening with expertly crafted cocktails, curated wines and a menu of light bites from Puck’s kitchen, all to the tune of DJ Michaelis’ house and hip-hop beats on weekend nights.
  • Unlike your typical steakhouse, CUT Beverly Hills is bright and airy with an all-white interior adorned with works by John Baldessari (from Puck’s private collection) and a skylight designed to amplify the moonlight.
Things to Know
  • Wolfgang Puck’s CUT is open for dinner Monday through Saturday.
  • When it comes to your attire for your CUT experience, dress to impress for a stylish night on the town. Dining in the heart of Beverly Hills at the famed Beverly Wilshire, Beverly Hills (A Four Seasons Hotel) doesn’t get more high profile.
  • Celebrity chef Wolfgang Puck often stops by, hopping from table to table to greet his guests, and you’d hate to be underdressed for such an occasion.
The Food
  • You’ll want to start with the bone marrow flan. The savory starter comes served inside bones, along with a mushroom marmalade on the side and a parsley salad on top.
  • If you aren’t craving steak (with wagyu, Angus and premium corn-fed options, how could you not?) go for the double thick Kurobpta pork chop served with Murray Farms’ moustarda.
  • Enjoy light bites from Wolfgang Puck’s kitchen at CUT Lounge, like tuna tartare sandwiches, beef sliders on brioche buns and sourdough grilled cheese.
  • You’ll want to save room for dessert. Cocoa lovers will swoon over the dark chocolate souffle served with Gianduja chocolate ice cream and warm chocolate ganache.
The Drinks
  • The wine list travels the world, but weighs heavily on steak-complementing California cabernets.
  • Also notable are the handpicked Coravin selections — CUT is one of the first Los Angeles restaurants to offer exclusive vintages by-the-glass utilizing this new technology that lets you open a bottle of wine without removing the cork, thus allowing the bottle’s aging to continue.
  • A well rounded menu of handcrafted cocktails ensure that you’ll be able to find the perfect sip. Barrel-aged cocktails (aged for 6 weeks in-house) pair particularly well with CUT’s steakhouse fare.
