While there isn’t a set cheese course at Del Posto, there is a selection of three cheeses that can be ordered in addition to or as a supplement to dessert. For a soft cheese, we love the two-month-old ricotta, which is served with a eucalyptus honey. For a semi-soft cheese, the 24-month-aged Parmigianino Reggiano from the Emilia-Romagna region of Italy is a favorite. It’s served with a Mosto Cotto that’s elegantly drizzled onto the plate with a taste that’s reminiscent of a good port wine. For a more pungent cheese, the Salva Cremasco from Lombardia is an excellent choice and served with preserved amarena cherries. The best part about the cheeses at the Forbes Travel Guide Five-Star restaurant is that they are meant to be nibbled and enjoyed with your hands. All are served with a linen napkin doused in water and wrapped around an orange round and a thyme sprig so that you can freshen your fingers after you’re finished eating.
