Olives, located in the St. Regis and under the direction of star chef Todd English,
delivers American cuisine with strong Mediterranean influences. The seasonal menu
contains dishes that incorporate local ingredients, such as braised Prince Edward
Island mussels, brick-oven-fired oyster flatbread, skillet-seared Rocky Mountain trout
and goat cheese gnocchi. The warm dining room with pinewood floors, antique furniture
and a Tuscan-influenced exhibition kitchen strikes just the right tone.
