Chef Joachim Splichal has captured tons of awards, primarily for his ability to translate the French joy of eating to American sensibilities. His brasserie concept works wonderfully in Las Vegas because it is simple food done well. The charming spot looks as if it came straight from Paris, with its red leather chairs and banquettes, brass rails and wood walls. Like the décor, the traditional bistro menu is comfortable, yet elegant. Dishes such as the roasted chicken with garlic French fries and braised short rib with Lyonnaise potatoes are comfort foods at their best. If your evenings are already booked up, try Pinot Brasserie for lunch, as there are hearty sandwiches, including a croque monsieur, which hit the right note every time.
