The Carolina Dining Room, first opened in 1901, makes you feel as though you’ve stepped back in time; only fitting as a part of The Carolina Hotel at Pinehurst Resort. The restaurant is open from 6 a.m. to 9 p.m. and the indulgent breakfast buffet of made-to-order omelets, fresh fruit and Southern favorites is not to be missed before a round of golf on one of the resort’s eight pristine golf courses. For dinner, executive chef Thierry Debailleul carves hand-selected, aged beef with a signature dry rub for steaks and chops. The decadent cuisine also includes options like the foie gras terrine and Maine lobster salad, pork tenderloin with crispy pancetta and lamb Porterhouse with house lamb sausage. And for dessert, you can order a Pinehurst brownie sundae topped with three kinds of ice cream and hot fudge, caramel sauce and candied pecans. The Carolina Dining Room also includes seasonal dishes using fresh produce from local farmers.
