Rosewood CordeValle has a few restaurants on site that will keep you full and happy. Il Vigneto, overseen by executive chef Luca Rutigliano, is the crown jewel of the Forbes Travel Guide Four-Star hotel. Open exclusively for dinner, Rutigliano takes an artful approach to California and Italian cuisines, using organic produce. Main courses here include Monterey sand dabs meuniére with an English pea and artichoke ragout, house-made fettuccine with roasted Maine lobster, and various cuts of steak served with your choice of condiment and sauce, including house-made chili rub and a house-specialty barbecue sauce. For dessert, there’s rum raisin bread pudding with vanilla gelato, a chocolate marquise with a banana crème brûlée center, and the simple yet satisfying s’mores roasted over a fire pit.
You’ll notice a couple of Il Vigneto’s dishes at other eateries on the property. One Iron Bar, the luxury hotel's contemporary spot that overlooks the golf course, offers a few Il Vigneto meals on its lunch and dinner menus. The bar also features upscale twists to comfort food fare, like a lamb burger with eggplant aioli, macaroni and cheese with sausage, lemon and peas, and a filet mignon pizza with roasted garlic and bleu cheese. The resort’s casual spot, Lion’s Peak Grill, offers outdoor dining for breakfast and lunch, along with an all-day menu dominated by all-American sandwiches like a Kobe beef hot dog with all the fixings.
