Delicious seafood is the theme at Seablue, one of two Michael Mina-helmed restaurants at MGM Grand. Watch the chefs in the open-air kitchen from the aquatic-themed dining room, complete with water cascading down the walls. The menu changes with the season, and all the seafood is caught wild and flown in daily. The kitchen draws from traditional Mediterranean cooking techniques, including the use of tagines, or Moroccan clay ovens, and simple grilling to make the seafood shine. The Seablue paella is not traditional Spanish paella, but it’s loaded with fresh seafood, rabbit and chorizo and finished with a saffron risotto. One of the biggest hits on the menu is the lobster corndog, a luxurious version that puts the original to shame. Delicate lobster sausage is dipped in batter, fried and served with a pungent but refreshing mustard crème fraîche. Not the healthiest option, but how often do you come across lobster corn dogs? Besides, you’re on vacation.
