The Georgian is located at the far end of the grand lobby inside Seattle’s The Fairmont Olympic Hotel, and you’ll pass by the hotel’s Terrace Lounge before entering the restaurant. Pop in here for a drink before meeting your dinner guest, though all of the cocktails available there — including a delicious riff on an Old Fashioned that’s flavored with bourbon cask-aged maple syrup and a Lemon Drop made with Absolut Citron and a honey syrup from bees raised on the hotel’s rooftop — are also served in the main dining room. It’s unlikely that you’ll have to wait for a table, given that the Forbes Travel Guide Four-Star restaurant is quite large and the staff is very aware of what guests are to be seated each evening. Nevertheless, if you’re dining at The Georgian on a Thursday, Friday or Saturday evening, you might want to first head to the Terrace Lounge for an aperitif.
