Because it’s located inside The Fairmont Olympic Hotel and the restaurant's large arched windows are covered with sheer curtains, there aren’t any special outdoor views at The Georgian restaurant. Nevertheless, the dining room is one of the most beautiful in the Northwest and a sight to see in itself. Sixteen-foot chandeliers illuminate the pale yellow and cream-colored room, which has extra-tall ceilings that provide a dramatic backdrop for dining. Palm trees also command attention, and the whole space recalls a bygone era when men wore tuxedos and smoking jackets. Many tables at the Forbes Travel Guide Four-Star restaurant also feature banquette-style seating for two, so you and your date can sit side-by-side as you marvel at the gilded architecture together, or, perhaps, admire the whiffs of steam emanating from your chocolate soufflé.
