If you’ve heard of Mr & Mrs Bund’s celebrated chef Paul Pairet, it’s likely you’ve heard of his signature dessert, the lemon and lemon tart. The exquisite dish looks like a simple one, but it is actually a complex work of art that takes several days to create at the Shanghai restaurant. When served to you at the table, it appears as if it is a whole, shining lemon without any cut or blemish. However, the lemon has been carved out and simmered in sugar water for 18 hours. Immediately before serving, the whole candied peel is filled with lemon sorbet, lemon curd, vanilla chantilly, citrus segments and served with sablé. It’s a delicious, playful take on the French dessert tarte au citron.
