Diners at Pelham’s, Waldorf Astoria Shanghai on the Bund’s Western fine dining restaurant, kick off their sumptuous meal with sublime salted butter and four choices of rolls, including a cheese option and a whole grain baguette. All bread is baked fresh in-house and is crusty on the outside and hot and chewy on the inside — you’ll have to restrain yourself from having three or four pieces. During dinner service at Pelham’s, the restaurant’s chefs (Hubert Bourdon and Clément Pellerin) will send out an amuse bouche to set the tone for the meal ahead. In the cooler months, look for soups; and when it’s warmer, you’ll find strawberries and champagne.
