Master chef Akira Kimura and sushi chef Masami Ishii are at their best when assembling one of the more than 10 kaiseki set menus on offer at Yamazato. Set menus range everywhere from bento boxes to set menus that cost upwards of RMB1,000 (US$158) (which offers a course with Australian Wagyu beef), and in general the price just indicates the different qualities of ingredients. The more you pay, the more exotic your dinner. However, the menus in general will merely typify that they will serve up a sashimi course, a boiled dish, a fried dish, a pickled dish a grilled dish and — depending on the variation — a stew or a rice dish. It’s best not to question but to leave the choosing to the chefs. They’ll pick the best seasonal, fresh ingredients that they have on offer to craft a meal for you that’s interesting, traditional and well balanced. All you have to do is have faith.
