The executive chef at Yamazato is Akira Kimura, who has more than 30 years of experience in Japanese kitchens and helped to head the teppanyaki Shanghai restaurant at Hotel Okura Tokyo. His talents not only include teppanyaki. Offerings include warming and well-flavored stews, light tempura and fun sashimi plates. Helping him uphold the Okura name is sushi veteran Masami Ishii, who leads Yamazato’s sushi department. Ishii also has more than 30 years of experience in the kitchen and has been creating sushi and sashimi since he was a teenager. He not only is able to pick out the best fish with the freshest, cleanest flavor, but he also often pairs each piece with a tiny sliver of lemon or pickled vegetable to give a flavor foil to each tender piece.
