What is Adam Tihany’s favorite restaurant?
One of my recent favorites is Noma in Copenhagen. It’s absolutely extraordinary. I managed to get a table for lunch in December through twisting hands and making phone calls, and it was completely memorable. It was original and whimsical and just brilliant. I had like 27 courses during lunch and one of them was meat, just one, and that was a duck. What was quite extraordinary was that it was a very relaxing experience, there’s no formality. It’s very sophisticated yet completely informal and everybody in the restaurant serves the food from the chef down to kitchen assistant. It’s just a total joy to sit there for three hours smiling the whole time — you can’t wait for the next dish.
