As the head mixologist at what is often considered one of the best bars in the world, Ago Perrone certainly knows how to whip up a good cocktail. The Connaught Bar’s main bartender hails from Lake Como, Italy, and is more than passionate about his craft. Perrone began his bartending career in a small coffee shop in Como before attending the 3F American Bartender School. He moved to London in 2003 and became the head bartender at Dusk. But it was at Montgomery Place in Notting Hill that his career really took off — earning him several prestigious awards. In 2008, Perrone joined the team at the esteemed Connaught Hotel. And in 2010, he received the “World’s Best Bartender” award from Tales of the Cocktail, which also bestowed the “World’s Best Cocktail Bar” title to The Connaught Bar in 2012.

    Where are the best places to hear live music in London?

    The Dorchester is very classic hotel; it’s beautiful. In the lounge, there’s a piano, and usually there is a violin and the bass or guitar or some other group there to join the pianist. It’s a very nice experience. Also there is The Nightjar, a jazz club, as well as the Bassoon Bar in the Corinthia Hotel.

    What are the best museums in London?

    I like the history museum a lot because you can go through the history of the world. And, also, I like the National Portrait Gallery because I love photography. I like to switch off sometimes and go see some pictures as inspiration.

    What are the best bars in London?

    [Aside from The Connaught Bar], the best bars in London depend on what you’re looking for. The Artesian Bar at The Langham Hotel; they use a lot of creativity as well; they’re very funky. Montgomery Place is a small bar in Notting Hill where I was working previously before coming to The Connaught, and it is amazing with its music, fantastic cocktails and great bar food as well. Also there is The Nightjar, which is a jazz club with live music and they do experimental cocktails — it’s very interesting.

    I don’t use lots of hotel in London because I live here, but I think The Connaught is a good representative of this beautiful country.

    What is the weather like right now in London?

    London is so particular. Today it is snowing and it’s fantastic, tomorrow if it’s sunny it will be amazing. If it’s raining, it’s very romantic as well. Every day, you can sense a different atmosphere in London, every day is beautiful. Of course, if you stay too long and it’s cold and rainy, you start to complain. But still, when you leave London you miss it; and when you come back, you’re very happy to be back.

    What are the best activities to do in London?

    London is very much what you like because it’s full of everything. I would just suggest going to museums, art galleries, and doing a bar tour. Also, go to Mayfair because that is where The Connaught hotel is. Mayfair is the real London for me. Now, it’s the luxury part of London and the world. When you go around you sense the history, you get the sensation of when Mayfair was a market area. It was a center of trade where people were selling goods and going around with horses. It’s very romantic. The last thing to see and do in London is to go to The Connaught Bar.

    What are the best restaurants in London?

    Hélène Darroze, which is our two-star Michelin restaurant here at The Connaught because once you try it, it’s like an addiction. You cannot stop. It’s very rich in flavor and has a good blend of French heritage with a touch of Mediterranean. So the food is rich and light and has fantastic flavor, and the restaurant has great service.

    What are Ago Perrone’s favorite Italian restaurants in London?

    Locanda Locatelli. Giorgio Locatelli is one of the biggest Italian chefs. I love his style of cooking because he’s from Varese, which is a town next to Lake Como — where I’m from. So every time I go there it reminds me of my childhood.

    What does Ago Perrone have going on in 2013?

    I have a lot of projects in my drawer at the moment. We’re planning to do an academy for consumers and for trade within the hotel. We’re changing the menus at both bars [The Connaught Bar and The Coburg Bar] very soon because we always want to be on top of the game. We are about to make our own brand of spirits and bitters to mix in our cocktails. We’re about to open a fantastic champagne bar in the hotel, which will be very exclusive and sexy, and we will have all the vintage cocktails. So, during my travels, I can pick up the right ingredients, bring them back and use them to please our guests’ palates. There is always the taste profile of the drink, but the history as well because I can mention that during my travels I discovered this ingredient and I want to share it with them.

    A successful bar is like a perfect cocktail. There needs to be a balance between different ingredients: In a successful bar there is the environment, the music, and the cocktail playing a very big part, but more than anything it’s the team. People loving and being proud of the place where they work and involving the guest in the bar life.

    I usually like to experiment with spices from different countries. During my travels, I always pick up some ingredients. Spices in a cocktail always adds this special depth and this special touch that can make the drink very memorable because there’s a history behind it.

    What does Ago Perrone think are the latest London cocktail trends?

    London, as a town, is a mix of different cultures, histories, religions, ingredients and everything. London has always been leading the cocktail industry, all over the world. Old-fashioned things, even in cocktail culture, are coming back. So now is the time to go back to classic cocktails but twist them with a modern interpretation by using spices from different countries or using techniques that are used in the pastry [shop] or in the kitchen. I think that using your own personality is always very important. We love to make the guest a part of The Connaught Bar experience. So it’s not only about the cocktail, it’s about how you deliver it. You need to be smart, friendly and knowledgeable.

    What’s Ago Perrone’s favorite cocktail?

    You cannot really say you have a favorite cocktail because it depends on where you are and who you are with. If you’re on the beach in Mexico you’re drinking margaritas, a piña colada, or a cold beer. If you’re in London you go for a classic fancy cocktail. If you are in the Caribbean you go for rum. So a favorite cocktail comes down to so many points — depends on where you are, the time of the day, who you are with, if you’re drinking for pleasure, if you’re celebrating. We can write a book about it.
