As the head mixologist at what is often considered one of the best bars in the world, Ago Perrone certainly knows how to whip up a good cocktail. The Connaught Bar’s main bartender hails from Lake Como, Italy, and is more than passionate about his craft. Perrone began his bartending career in a small coffee shop in Como before attending the 3F American Bartender School. He moved to London in 2003 and became the head bartender at Dusk. But it was at Montgomery Place in Notting Hill that his career really took off — earning him several prestigious awards. In 2008, Perrone joined the team at the esteemed Connaught Hotel. And in 2010, he received the “World’s Best Bartender” award from Tales of the Cocktail, which also bestowed the “World’s Best Cocktail Bar” title to The Connaught Bar in 2012.

    What does Ago Perrone bring in his carry-on?

    I bring books to read because the lifestyle in London is pretty intense and finding an hour every day to read your favorite book is very challenging, so when I travel it’s just my space. Nobody can disturb me, no email, no phone call; it’s just me, my book and my dreams — I love flying, makes me dream a lot to be honest.

    What is the best trip Ago Perrone has ever taken?

    To be honest, every time when I travel there is something memorable to bring back home in terms of people you meet and things you do. Every year I go to Mexico for family reasons because my wife is Mexican, but when I went for the first time, I fell in love with the culture, the mentality, the people, the food, everything.

    And the first time we went to Guadalajara, I went on the Pacific side to enjoy a bit of the surfing resorts. Also, I really loved when we went to visit some of the pyramids from the Mayan culture. The people are just lovely to be honest. You come back and your heart is filled

    What are Ago Perrone’s favorite shops to visit when he travels?

    Usually, when I travel, I always try to get local people to take me to shops where I can find local ingredients. So it can be wine, beer, spirits, spices or any kind of food or beverages that will help me learn about the local culture. And I can also find inspiration to bring back to London for our new cocktail menu, keeping The Connaught Bar as the best bar in the world.

    What does Ago Perrone always travel with?

    I always travel with my computer because I need to work, and vitamins, because it’s always good in the morning. Recently, I was in New Zealand and there was a 12-hour difference — it was not easy at all. I also travel with my camera because I love taking photos, especially when I go to new places — from the plane to the landscapes and to the towns.

    What are Ago Perrone’s favorite hotels?

    I don’t travel so regularly to say that I have a preference. I like this kind of New York, Toronto style of urban town. But for holiday or relaxation I love boutique hotels more in the countryside, more in the hippy chic style. Because boutique hotels personalize everything to make you feel very comfortable, you can enjoy every single feature of the hotel rather than just sleeping and going to business meetings.

    What are Ago Perrone’s favorite cities?

    I live in London, which is a melting pot of different cultures and styles, but still a very traditional town. You can smell and you can breathe a lot of history in London. So when I visit New York and Toronto, they are fairly new towns and you feel a different vibration; there’s more urban style, which I really like. I want to go to Bangkok because I’ve heard it’s a fantastic town with a mix of different cultures, regions and style, so it sounds very interesting. This is on the to-do list for 2013.

    What cocktail trend does Ago Perrone want to see end?

    There is nothing we want to see die in this bar industry. But, I’ve been using cocktail umbrellas for eight years and now all of a sudden they’re coming back. So before people were laughing at me saying, “Ago’s using cocktail umbrellas.” And I’d say, “Guys, be quiet, because then everybody will use them and you won’t laugh anymore.” So now, really slowly, they’re coming back.
