What are Andre Fu’s favorite restaurants?
In London, I like Wright Brothers in Borough Market because of its location and the way it encapsulates the quintessentially modern British spirit. The offering of oysters and dressed crab is also delightful yet casual. In Osaka, there’s a restaurant called Hajime. It’s really fusing French cuisine with local ingredients and a lot of Japanese techniques, so it’s very fascinating. In Singapore, there’s Restaurant André, which again is a very elaborate but interesting experience. In Hong Kong, there’s a very down-to-earth Chinese restaurant called Sang Kee, which is honest Cantonese food served in a very unassuming environment. It’s just really good food.
