What does Anthony Zhao love most about his job?
My favorite thing about cooking is that it makes me calm and able to concentrate. I really enjoy each dish I make because they’re all from my own recipes. If I cook someone else’s recipe, I don’t enjoy it as much because I didn’t have to do the thinking on my own. At my restaurant [Mi Xiang Yuan], I do each step in the order I want to do it in, with the ingredients I like; the whole process was designed by me, so I know all the details and my heart has really gone into it. When I do this, I know people really enjoy the food, and it makes me really happy to hear why they enjoyed it.
