Did Colin Bedford ever imagine being a chef in the South?
No, I actually only came here for a month. I knew The Fearrington House Restaurant’s previous head chef Graham Fox — we worked together in England at The Castle Hotel. He moved here when I moved to Canada to work at Prince of Wales. I came down for a brief month before I was going to go on traveling someplace else. Then in the 23rd hour, they offered me a job. I accepted the job, went home, then came back. So there were a lot of ties between here and the restaurant I worked at before in England. The general manager at The Castle Hotel in Taunton was then the GM here. The GM was very good friends with the chefs, then the connection just kind of trickled down to us. There were ties between the properties back then, but not anymore.
